Daesang participated in the world's largest food technology exhibition, IFT 2026, showcasing next-generation food ingredients, the company announced Thursday.
The exhibition ran from Monday through Wednesday at McCormick Place in Chicago. IFT 2026 is the world's largest annual food technology exhibition, organized by the Institute of Food Technologists, a US-based international food science organization. This year's event drew more than 1,000 companies and 15,500 buyers from over 80 countries. Daesang has participated in the exhibition since 2024 to introduce its food ingredient technologies. This year, the company used live sample demonstrations to highlight the differentiated qualities of its umami-enhancing and sodium-reduction solutions.
At the exhibition, Daesang presented a range of food ingredients in line with global food trends emphasizing health and sustainability, leading with its next-generation fermented seasoning material "Disavory," which can be used in developing clean-label, vegan and low-sodium products. Disavory is a fermented seasoning material that naturally enhances rich umami flavor and aroma while preserving the food's original taste. It can replace flavor enhancers and reduce sodium content, making it suitable for developing clean-label and low-sodium products.
Daesang also presented sugar-reduction solutions from its integrated sugar-substitute brand "Swivero," responding to growing demand for weight management and low-sugar foods. Swivero is a brand launched in the North American market that encompasses allulose-based products, stevia and customized low-sugar offerings for consumers. The company also introduced solutions designed to address the off-putting sweetness, bitterness and lingering aftertaste that can arise when using sugar substitutes, delivering a more natural and balanced flavor profile.
Daesang also introduced "Emulaid," a plant-based emulsion stabilizer derived from waxy corn starch. Emulaid maintains a stable, uniform blend of water and oil to improve the quality and texture of a wide range of foods, including beverages, creamers, sauces and flavorings. The company also unveiled for the first time "Capsulaid," a new material capable of stably encapsulating various functional ingredients — including flavorings, colorants, oils and vitamins — in powder form.
"IFT 2026 was a meaningful occasion to once again introduce to the global market the food ingredient technologies and differentiated solution capabilities we have built up over the past 70 years," said Lee Hyo-hun, head of Daesang's ingredient marketing division. "Going forward, we will strengthen our position as a food ingredient partner that goes beyond simply supplying raw materials to developing products together with our customers."
